This was quick and easy with leftover grilled chicken. Was low on raisins so upped the celery and apples and used a heavy hand when measuring curry. Loved it! So did my picky husband! WIN WIN!

I loved this recipe! I did, however, double the amount of raisins, added 1/4 cup more mayo and put about 1/4 cup of slivered almonds in it. It was so delicious!!!

needed a quick lunch and this was it! used half mayo/greek yogurt mixture. added red onion, more curry. sautéed a chicken breast with lemon pepper. threw in some grapes with the raisins and apple. was awesome. ate in a pita, and as a lettuce wrap.

I combined this recipe with one of the other curried chicken salad recipes: http://www.myrecipes.com/ingredients/chicken-recipes/best-chicken-salad-10000001890721/page2.html with some other modifications, and was quite happy with the result. 1. As Calbeck suggested, use (low-fat) yoghurt instead of mayo. I found that using both, as suggested in the other recipe, led to a mixture that was too wet for my taste. 2. I didn't have scallions so I chopped some onion. 3. This recipe contains apple, so I used apple cidar vinegar instead of the distilled white vinegar as indicated in the other recipe. 4. "some" black pepper brightened the taste noticeably. But this is a recipe that seems to lend itself to a lot of personal touches.

Try roasting the sweet curry in a pie plate for 5 to 10 minutes at 350. Roasting will greatly enhance the flavor.

Delicious! I do agree that the quality of your curry spice will make or break the salad. Will definitely make again and will try with yogurt instead of mayo...

I found out that this didn't provide enough for the people I was serving. I doubled the chicken to 8 ounces and doubled the curry sauce. It is now fantastic now!

LOVE this recipe. It's a great way to use up left over chicken and I take it for lunch. I usually use grapes instead of raisins just because I like having them around but I'm sure it would be just as great. Such a great standard to have in rotation!

I made this twice. The second time it tasted better; here are the changes I made: The second time I used a different curry (found at Whole Foods) instead of the McCormick curry powder I used the first time around. The curry from Whole Foods had much more flavor and was also spicier...HUGE impact. I also added some lemon juice the second time, probably around a couple teaspoons, which provided the acid I thought it needed to perk it up a bit. I also added extra raisins, because I thought it needed more sweetness to balance the increased curry flavor. I really love this! And although the low fat mayo is fine, next time I'd like to try with yogurt, I think.

This recipe was good. We don't use curry alot so it was something different. If you like curry, this is a great recipe! Also, we used regular chicken breasts on the stove and forgot to add the celery!

I LOVE this recipe!!!! I substitued no fat plain Greek yogurt for the mayo, and added halved grapes instead of raisins. Don't have a grill available, so I sauteed the chicken in a little sunflower oil. SO healthy and delicious!!!!!!! A definite repeat!

This recipe was delicious on whole wheat toast. I used some leftover breast meat from a rotissarie chicken, so only took a couple of minutes to make. Great for work lunches.

awesome chicken salad recipe! i didn't have raisins, but added chopped red grapes instead. just used a store bought rotisserie chicken which made it super easy and quick. so good on triscuits!

I LOVE this chicken salad! We roast a whole chicken almost once a week, and this is now my go-to salad for leftovers (you don't have to used the grilled lemon chicken called for in the recipe.) Super easy, super flavorful, and just the right mix of savory and sweet. I send this to school for lunches, too.

This is my absolute favorite Cooking Light recipe of all time. I marinate chicken breasts in lime juice and a citrusy spice blend and bake them, and add some extra curry and ground red pepper to the sauce (I like it spicy!). Other than that, I follow the recipe exactly. It's delicious in a whole wheat tortilla with spinach, or on crackers. SO many people have asked me for the recipe!

I used European-style yogurt instead of the mayo (and no water), and fake crab and cooked shrimp instead of the chicken. A super fast, easy, and tasty dinner on a hot summer evening.

Love, love,love this chicken salad. I love roasting a whole chicken in my counter top electric roaster and always make this salad with the left over white meat--which is often. All the ingredients go so well together and just the right amount of curry. Great as a sandwich spread on a good hearty bread. Everyone really likes it. Try it, I'm sure you will really like it too!

I highly recommend this easy, delicious recipe!! It was so easy to make, and with all the fresh ingredients and simplicity of the recipe, this salad was refreshing and so yummy!! The only thing I did differently was curry the chicken as well, and cooked it with some garlic. This added a little extra flavor, and with the amount of curry they have you put in the mayo, some more curry in the chicken did not overdo it. I also peeled my apple, which I think made it much smoother tasting for a salad like this. YUMMY!!! :)

This makes a great low-fat lunch with whole grain crackers! I used chicken breast and sprinkled some s+p along with lime juice and olive oil to marinate and then used the george forman grill and it turned out great. I would also recommend sprinkling some additional curry powder on the chicken breasts for more flavor. Put some citrus juice on the diced apple as well to prevent browning (used golden delicious) and it was great!

I really enjoyed this chicken salad. I used chicken with salt & pepper grilled on the foreman grill and used cranberries instead of raisins as that was what I had on hand. Used it in a sandwich and on its own. It has so much flavor that I actually enjoyed it on its own better! Great way to spice up a chicken salad.

Recipe is amazingly good. I have changed what I do to mine a bit. Instead of Mayo I use yogurt, and I also like to add some goji berries, walnuts, and cranberries.
