3/4 cup chopped walnuts (akhrot)
1 tbsp instant coffee powder
1/2 cup soft butter
1/2 cup condensed milk
1 1/4 cups plain flour (maida)
1/2 tsp baking powder
1 tsp baking soda
1 tsp vanilla essence

Pointers while baking Date Walnut Cake

- Grease and line it with parchment paper and keep the baking tin ready.
- Pre-heat the oven for at least 5-10 minutes.

How to make Date Walnut Cake
- For making the date walnut cake (eggless date walnut cake), first pre-heat the oven to 180°C (360°F). Using a pastry brush, generously butter a bread loaf tin of 200 mm. (8”) or regular cake pan wich is lined with a baking paper and keep aside.
- In a deep bowl, take instant coffee powder.
- Add 1 tbsp of hot water. If you have a coffee press, then you can even make use of an espresso shot.
- Mix well and keep aside. You can make the cake with just walnuts and dates but, the coffee enhances the taste greatly.
- In another bowl, take the sliced dates. You can use any varieties of dates just ensure they are pitted.
- Add 1 cup of hot water.
- Cover with a lid and keep aside to soak for 30 minutes.
- After half an hour it will look like this. The dates will soften which will provide a moistness to the date and walnut cake.
- Drain the dates and keep aside.
- In another bowl, take the soft butter.
- Pour the condense milk. Since, this is an eggless cake recipe we are using condense milk that will help us achieve an ideal texture.
- Beat it using an electric beater till smooth and fluffy.
- Add the plain flour.
- Add the baking powder and baking soda. We are using both because we have added enough soda to neutralize the acid in the Date & Walnut Cake recipe.
- Mix well using a spatula.
- Add the soaked dates.
- Add ½ cup walnuts. They provide a nice bite to the walnut dates cake.
- Add the vanilla essence and coffee-water mixture. These both act as a flavor enhancer in the eggless date and walnut cake recipe.
- Mix well using a spatula.
- Pour the batter into the greased bread loaf tin and tap it lightly.
- Sprinkle the remaining ¼ cup of walnuts evenly overdate walnut cake (eggless date walnut cake). The walnuts on top which will turn crunchy on baking will provide a nice bit of crunch to each slice of the cake.
- Bake it in a pre-heated oven at 180°c (360°f) for 55 minutes or till the toothpick inserted comes out clean. As each oven is different therefore start checking the cake after 40 minutes to make sure it doesn't over bake.
- Cool slightly.
- Loosen the sides of thedate walnut cake (eggless date walnut cake)with the help of a knife.
- Demould it. For demoulding, simply invert the cake tin on a clean chopping board or plate.
- Allow thedate walnut cake (eggless date walnut cake)to cool completely and cut the cake into 13 mm. (½“) slices.
- Serve thedate walnut cake (eggless date walnut cake)or store in an air-tight container.
- Eggless Orange and Tutti Frutti Loaf, Chocolate Carrot Loaf are other tea-time cakes.
