I interviewed a lunch truck owner on Drexel's campus today and was surprised to learn that they sell 15lbs of bacon *per* day. If I put on my business simulation hat for a second, let's do the math here. 👨🔬 Knowing that there are about 453.592 grams in a pound, we can calculate the total grams of bacon sold per day. Assuming each slice weighs an average of 17.5 grams (the midpoint between 15 and 20 grams), and each sandwich uses 2 slices, we can find out how many sandwiches are sold per day. If we sold 15 lbs of bacon each day and each sandwich contains 2 slices of bacon, we would sell approximately 194 sandwiches per day.So that means one truck sells at *least* 194 sandwiches per day that contain bacon only. And we can safely assume that's only a fraction of the total number of sandwiches they sell on a daily basis. Let's call that "Food for Thought" for all you #entrepreneurs out there looking to create a #foodtruck business. #startupwars #edtech #business #simulations

For those of you who are wondering just how far plant based burgers have come, you have to go back to Portland Oregon a quarter of a century ago in May of 1998. A startup called Garden Burger, riding the internet boom and having gone public a few years earlier was viewed as the next "revolution" in plant based food. This was the commercial the made for the last episode of Seinfeld which this company with $40 million in sales spent $1.5 million on. They went bankrupt seven years later. The moral of the story is that dreams and money don't build a plant based burger market. Great taste, great value, along with being great for the environment do. Also better commercials. #plantbasedfoods #environmentalimpact #plantbasedbusiness

The Retiring & Closing Trend - have you experienced it recently?We all know the challenges facing retail butcher stores: Lack of trained staff, rising costs of meat and energy bills, rent/mortgage increases, customers purses tightening...So it can't come as any surprise that the new worrying trend for butchers is that they're closing at an alarming rate when the owner retires, because there is simply no one else who wants to take the business over. Back in the day the shop would usually pass to a family member, often a child, but those days are long gone (and I'm all for that to be honest, I don't think kids should be coerced into following a family business if they don't have the passion for it), but I'm finding butchers are retiring later and later than they wanted, to cling on to their business and the hope that someone can continue it.But...No one ever comes along so eventually they close.And that's a massive loss to local economies and communities all over Australia and beyond... With no easy or quick solution. There are some butchers who are adapting to the changing market - making their businesses attractive brands that go beyond the idea of what people think butchery is (see the excellent Victor Churchill!) but at it's core, we simply aren't getting enough people into butchery, and more importantly, getting people into butchery who have an acute business brain. I'm a firm believer in small businesses keeping the world turning, and perhaps we should start marketing butchery from a business angle too.
