Recipe - Delicious 3-Ingredient Gluten Free Side Dish - Happy Home Fairy (2024)

Ohhh man.

When I make this stuff I have been known to just dig into the pot I cooked it in with a large spoon.

Ingredients:

1 box Roasted Brown Rice Couscous (I found this delicious Lundberg brand at Publix) *Please note that this is BROWN RICE couscous… Regular couscous is NOT gluten free.*

Dried apricots

Carrots (may I suggest NOT getting baby carrots – you’ll find out why in a second… You will need big carrots – peel them first)

Step 1 – Cook brown rice couscous according to package directions.

Step 2 – While couscous is cooking, grate your carrots. Holy cow this step will take you FOREVER if you use baby carrots (and you might lose a finger or two to the grater), but that is what I had in the fridge. 🙂

Step 3 – Chop up a bunch of dried apricots. If you have kitchen scissors, use them for this step. Mine were in the dishwasher. 🙂

Step 4 – When the couscous is finished cooking, mix all ingredients together.

TADA!

Gluten Free. Delicious. Goes great with grilled chicken.

Come on over and we can clink our spoons and dig in together.

      Hey Deb! Not a silly question at all!!! I just wish I had an answer for you! I just eyeball everything… It’s really a matter of taste, indeed. 🙂 If I am using big carrots I will probably use 1-2 large ones, grated. For the apricots… maybe about 10 chopped?     I went grocery shopping yesterday morning and found the same couscous at our supermarket! Grabbed the ingredients and am looking forward to making this as one of our meals this week – although I think I could probably eat this as a meal itself!

    This looks great! However I will give you another EXCELLENT reason not to use “baby” carrots (which really are not babies at all)…they are soaked in chlorine prior to packaging. It is an antimicrobial treatment, and even though they are rinsed in potable water after, there are still lingering chemicals.
